fix: register the transforms for use in workflows

This pull request includes several changes to the normalization process and the structure of the NormalizeDocument function. The most important changes involve modifying function signatures to simplify parameters and adding new functionality for document formatting.

Normalization process improvements:

• cmd/openapi/transform.go: Simplified the NormalizeDocument function call by merging NormalizeOptions into direct parameters.
• internal/transform/normalize.go: Updated NormalizeDocument and NormalizeFromReader functions to accept prefixItems as a direct parameter instead of part of NormalizeOptions. [1] [2]
