Update docs for data and privacy

1. Update the Data collection docs:

• Change title to Data and privacy
• Reword some sections
• Explicitly state that we do not collect any customer data

2. Fix font size for H3 and H4 in markdown (currently H3 is the same size as H2)

3. Update a docs link in the product for Project Settings (as per feedback from Prudential)

4. Rename Unleash introductory overview to Unleash architecture, and add a section on privacy
