What I'd like:

When building Bottlerocket, if you don't specify a variant, it will currently use aws-k8s-1.17. aws-k8s-1.17 is also referenced in some places in the documentation as an example. Now that aws-k8s-1.18 and aws-k8s-1.19 variants are available, and we want new users to go with newer versions unless they have a preference, we should update the default variant to a later one.

Here's an example from when we updated from 1.15 to 1.17: #1002.
